These Easy Black Bean Mummy Quesadillas are a fun and delicious Halloween dinner that comes together in under 15 minutes. Black beans and cheese are wrapped in tortilla ‘bandages’ to create adorable mummy faces that kids and adults will love.

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • 4 (8-inch) flour tortillas
  • ½ teaspoon ground cumin
  • ¼ teaspoon chili powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt
  • 12 tablespoons olive oil or butter
  • 8 googly eyes (candy eyes or olive slices)

Instructions

  1. Prepare the black bean filling: Drain and rinse the black beans. Spread on a paper towel-lined plate and blot dry. Transfer to a small bowl. Add cumin, chili powder, garlic powder, and salt. Mash with a fork until mostly broken down but still chunky. Set aside.
  2. Cut the tortillas: Using a sharp knife or pizza cutter, cut each tortilla into strips about ½-inch wide, leaving the center intact as a base. You should have 6-8 strips per tortilla.
  3. Assemble the quesadillas: Lay the cut tortilla strips on a cutting board, slightly overlapping, to form a rough circle. Spread about ¼ cup of the black bean mixture in the center, leaving a 1-inch border. Sprinkle about ¼ cup mozzarella and 2 tablespoons cheddar over the beans. Fold the tortilla strips over the filling to create the mummy wrap. Repeat with remaining tortillas.
  4. Cook the quesadillas: Heat a large non-stick skillet over medium heat. Add ½ tablespoon butter or olive oil. Place one or two quesadillas in the skillet (seam-side down). Cook for 2-3 minutes until golden brown. Carefully flip and cook another 2-3 minutes until cheese is melted and tortilla is golden.
  5. Add the eyes: Transfer cooked quesadilla to a cutting board. While still hot, press two googly eyes onto the top near the top edge. Let cool for 1-2 minutes before cutting.
  6. Serve immediately: Cut each quesadilla in half or into strips. Serve with salsa, sour cream, or guacamole.

Notes

Don’t overstuff the quesadillas. Blot the black beans dry to prevent sogginess. Cook over medium heat for best results. For faster melting, cover the skillet with a lid for the last minute of cooking. Assemble up to 4 hours ahead and refrigerate until ready to cook.
