A quick and easy buffalo ranch chicken dip made with simple ingredients, perfect for game day gatherings. Creamy, tangy, and spicy, this crowd-pleasing dip comes together in under 30 minutes and disappears fast.

Ingredients

Scale
  • 2 cups cooked chicken, shredded (about 1 large rotisserie chicken breast or 2 cans of drained chicken)
  • 8 ounces cream cheese, softened
  • 1 packet (1 ounce) ranch seasoning mix
  • ½ cup buffalo hot sauce (such as Frank’s RedHot)
  • 1 cup shredded cheddar cheese, divided
  • ½ cup shredded mozzarella cheese
  • ¼ cup sour cream
  • 2 to 3 green onions, sliced (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Take the cream cheese out of the fridge to soften if you haven’t already.
  2. Shred the chicken. If using rotisserie chicken, pull the meat off the bones and shred with two forks. You should have about 2 cups. If the chicken is cold, warm it in the microwave for 30 seconds.
  3. In a medium mixing bowl, combine the softened cream cheese, sour cream, and ranch seasoning. Beat with a hand mixer on low speed until smooth and fluffy, about 1 minute.
  4. Pour in the buffalo hot sauce and mix until fully incorporated.
  5. Fold in the shredded chicken, ¾ cup of the cheddar cheese, and all of the mozzarella cheese. Stir until evenly distributed.
  6. Transfer the mixture to a greased 9×9 baking dish or small skillet. Spread into an even layer. Sprinkle the remaining ¼ cup of cheddar cheese on top.
  7. Bake for 15 to 18 minutes, until bubbly around the edges and lightly golden on top. For a browner top, switch to broil for the last 1 to 2 minutes, watching closely.
  8. Let the dip rest for 3 to 5 minutes before serving. Sprinkle sliced green onions on top right before serving.

Notes

Let cream cheese soften for 20 minutes to avoid lumps. Taste the mixture before baking to adjust heat level. For make-ahead, assemble in dish, cover, and refrigerate up to 24 hours; add 5 minutes to bake time. Unbaked dip can be frozen for up to 1 month. Serve with tortilla chips, celery sticks, carrot chips, or baguette slices.
