  • 8 cups popped popcorn (about 1/2 cup unpopped kernels or one standard bag of microwave popcorn)
  • 3 tablespoons unsalted butter
  • 10 ounces marshmallows (about 1 standard bag)
  • 1/4 cup granulated sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon salt
  • Non-stick cooking spray or butter for your hands
  • Optional decorations: candy eyes, pretzel sticks, melted chocolate, sprinkles, or orange food coloring

Instructions

  1. Pop the popcorn. Pop 1/2 cup of kernels using your preferred method. Remove any unpopped kernels. Place the popped popcorn in a very large bowl and set aside.
  2. Prepare your workspace. Line a large baking sheet or countertop with parchment paper. Lightly spray the paper with non-stick cooking spray.
  3. Melt the butter. In a medium saucepan over medium-low heat, melt the 3 tablespoons of unsalted butter. Do not let it brown.
  4. Add the marshmallows. Pour the 10 ounces of marshmallows into the saucepan with the melted butter. Stir constantly until the marshmallows are completely melted and smooth, about 3-4 minutes.
  5. Mix in the cinnamon sugar. In a small bowl, combine the 1/4 cup granulated sugar, 1 1/2 teaspoons ground cinnamon, and 1/4 teaspoon salt. Pour this mixture into the melted marshmallow mixture and stir until fully incorporated. Remove from heat immediately.
  6. Combine with popcorn. Pour the marshmallow mixture over the popcorn. Use a rubber spatula to gently fold everything together until every kernel is coated. Work quickly.
  7. Grease your hands. Spray your hands generously with non-stick cooking spray or rub them with a little butter.
  8. Form the balls. Scoop up a handful of the popcorn mixture (about 1/2 cup) and gently press it into a ball shape. Place each ball on the prepared parchment paper. Repeat until all the mixture is used. You should get about 12-14 balls.
  9. Let them set. Allow the popcorn balls to cool completely at room temperature, about 15-20 minutes.
  10. Decorate (optional). Press candy eyes into the balls to make monsters, insert pretzel sticks for spider legs, or drizzle with melted white chocolate for mummy wraps. Let any decorations set before serving.

Notes

Keep the popcorn warm before adding the marshmallow mixture for better adhesion. Work quickly as the mixture sets fast. Grease your hands generously to prevent sticking. These popcorn balls taste even better the next day. Store in an airtight container at room temperature for up to 5 days, or freeze for up to 2 months. Do not refrigerate.
