This creamy cheesy green bean casserole with crispy onions is the perfect comfort food side dish. Tender green beans are wrapped in a velvety cheese sauce and topped with golden crispy onions for an irresistible crunch.

  • 1.5 lbs (680g) fresh green beans, trimmed and halved
  • 3 tbsp (42g) unsalted butter
  • 1 medium yellow onion, finely diced
  • 3 tbsp (24g) all-purpose flour
  • 1.5 cups (360ml) whole milk
  • 1/2 cup (120ml) heavy cream
  • 1.5 cups (170g) sharp cheddar cheese, shredded
  • 1/2 cup (55g) Gruyère cheese, shredded
  • 1/2 tsp salt
  • 1/4 tsp black pepper, freshly ground
  • 1/2 tsp garlic powder
  • 1.5 cups (about 85g) crispy fried onions

Instructions

  1. Preheat oven to 375°F (190°C). Bring a large pot of salted water to a boil. Fill a large bowl with ice water. Trim ends off green beans and cut in half.
  2. Blanch green beans in boiling water for exactly 3 minutes. Drain and plunge into ice water bath for 2-3 minutes. Drain well and pat dry.
  3. In a large skillet or saucepan, melt butter over medium heat. Add diced onion and cook 4-5 minutes until soft and translucent. Sprinkle flour over onions and whisk constantly for 1 minute.
  4. Slowly pour in milk and heavy cream, whisking constantly. Bring to a gentle simmer, then reduce heat to low. Cook 3-4 minutes, stirring occasionally, until thickened.
  5. Remove pan from heat. Add shredded cheddar and Gruyère one handful at a time, stirring until each addition is fully melted. Stir in salt, pepper, and garlic powder.
  6. Place blanched green beans in a 9×13-inch baking dish. Pour cheese sauce over top and gently fold to coat evenly. Spread into an even layer. Sprinkle 1 cup of crispy fried onions over top.
  7. Bake for 20-22 minutes until bubbly and golden. For extra-crispy onions, broil for last 1-2 minutes.
  8. Let casserole rest for 5 minutes before serving. Sprinkle remaining crispy onions on top.

Notes

For gluten-free, use a gluten-free all-purpose flour blend and check that crispy onions are certified gluten-free. For dairy-free, use plant-based butter, unsweetened oat milk, and dairy-free cheese shreds. The casserole can be assembled (without topping) up to 24 hours in advance; add 5-7 minutes to bake time if starting from cold. Leftovers keep in the refrigerator for up to 4 days.
