Instructions

  1. Sauté the aromatics: Place a large Dutch oven over medium heat and add the butter. Once melted, add the diced onion and cook for about 5 minutes until soft and translucent. Add the minced garlic and cook for 1 minute until fragrant.

  4. Incorporate the cream cheese: Reduce heat to low. Cut the softened cream cheese into small cubes and add to the pot. Whisk continuously until completely melted and smooth, about 2-3 minutes.
  5. Add chicken and beans: Stir in the shredded chicken and drained beans. Increase heat to medium and bring to a gentle simmer. Cook for 10 minutes, stirring occasionally.
  6. Finish with cream and lime: Turn off the heat. Stir in the heavy cream and lime juice. Taste and adjust seasoning with more salt and pepper if needed.
