  • 2 tablespoons fresh rosemary, chopped
  • 1 large lemon, thinly sliced
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Optional vegetables: baby potatoes, asparagus, green beans

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the veggies if using — toss baby potatoes or green beans in olive oil, salt, pepper, and half the minced garlic. Spread them evenly on the lined baking sheet. Roast these for about 10 minutes while you prep the salmon.
  3. Pat the salmon fillets dry with paper towels to ensure crispy skin. Season both sides lightly with salt and pepper.
  4. In a small bowl, mix olive oil, remaining garlic, and chopped rosemary. Brush this mixture over the skin and flesh sides of the salmon.
  5. Arrange lemon slices on the baking sheet around the salmon and veggies to roast and infuse flavor.
  6. Place the salmon skin-side down on the baking sheet, giving space between fillets to allow air circulation.
  7. Put the sheet pan in the oven and roast for 12–15 minutes until the salmon is opaque and flakes easily but remains moist inside. The skin should be crispy and golden.
  8. Check the salmon at 12 minutes to avoid overcooking. If the skin isn’t crisp enough, switch the oven to broil for 1–2 minutes, watching carefully.
  9. Remove from oven and let rest for 2 minutes before serving. Squeeze the roasted lemon slices over the fish for extra brightness.

Notes

Patting the salmon skin dry is essential for crispiness. Avoid overcrowding the pan to prevent steaming. Use high heat (425°F) for best results. If skin isn’t crispy enough, broil for 1-2 minutes carefully. Reheat leftovers in a low oven (300°F) to maintain skin texture.
