  • 3 tablespoons brown sugar (38g)

  • 2 tablespoons cold unsalted butter (28g), cut into small cubes
  • 2 tablespoons chopped pecans or walnuts (optional)

Instructions

  1. Preheat oven to 375ยฐF (190ยฐC).
  2. Peel apples if desired, core and chop into ยฝ-inch cubes.
  3. In a medium bowl, toss apples with 2 tablespoons brown sugar, 1 tablespoon melted butter, lemon juice, cinnamon, nutmeg, and salt. Let sit for 5 minutes.
  4. In a small bowl, combine oats, flour, 3 tablespoons brown sugar, cinnamon, and salt. Add cold cubed butter and cut in with a pastry cutter or fork until mixture resembles coarse meal with some pea-sized butter pieces. Stir in nuts if using.
  5. Divide apple mixture between two 8-ounce ramekins. Sprinkle topping evenly over each, pressing down gently.
  6. Place ramekins on a baking sheet and bake for 25-30 minutes, until filling is bubbling and topping is golden brown. Tent with foil if topping browns too quickly.
  7. Let cool for 5-10 minutes before serving.

Notes

Let the crisp rest for 5-10 minutes after baking to allow the filling to set. Use cold butter for the topping to achieve crispy clusters. For extra nutty flavor, toast the oats before making the topping.
