These Easy Halloween Rice Krispie Jack-O-Lantern Treats are soft, chewy, and decorated with orange candy coating and black icing faces. A quick, kid-friendly Halloween treat that looks impressive with minimal effort.

  • 6 cups Rice Krispies cereal
  • 4 tablespoons unsalted butter
  • 1 package (10 oz) marshmallows
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1 cup orange candy melts
  • 1 tablespoon coconut oil or shortening
  • Black decorating icing
  • Non-stick cooking spray

Instructions

  1. Spray the pumpkin-shaped silicone mold generously with non-stick cooking spray. Set the mold on a baking sheet for stability.
  2. In a large microwave-safe bowl, combine the butter and marshmallows. Microwave on high for 1 minute. Stir. Microwave for another 30 seconds. Stir again. If there are still lumps, microwave for 15-second intervals until smooth.
  3. Stir in the vanilla extract and a pinch of salt.
  4. Add the Rice Krispies cereal to the marshmallow mixture. Fold gently with a silicone spatula until all the cereal is coated.
  5. Let the mixture sit in the bowl for 2-3 minutes to cool slightly.
  6. Press the mixture into the pumpkin-shaped cavities. Use your fingers or the back of a spoon to press into the ridges. Do not pack too tightly.
  7. Allow the treats to set in the mold for at least 30 minutes at room temperature, or 15 minutes in the fridge.
  8. Gently peel the silicone mold away from the treats.
  9. In a small microwave-safe bowl, combine the orange candy melts with the coconut oil or shortening. Microwave on 50% power for 30 seconds. Stir. Repeat in 15-second intervals until completely smooth.
  10. Holding each pumpkin treat by the top, dip the bottom half into the melted orange candy coating. Let the excess drip off.
  11. Place the dipped treats on a baking sheet lined with parchment paper. Allow the coating to set completely, about 20 minutes at room temperature or 10 minutes in the fridge.
  12. Use the black decorating icing to draw jack-o-lantern faces on each treat.
  13. Let the icing set for a few minutes before stacking or serving.

Notes

Let the marshmallow mixture cool for 2-3 minutes before pressing into the mold to keep treats soft. Do not overheat marshmallows. Grease the mold well to prevent sticking. Use pre-colored orange candy melts for best results.
