This easy copycat Starbucks pumpkin spice latte syrup comes together in about 15 minutes with simple pantry ingredients. It’s the perfect way to enjoy cozy, spiced flavor without the drive-thru line or mystery ingredients.

  • 1 cup brown sugar, packed
  • 1/2 cup pumpkin puree (100% pure, not pumpkin pie filling)
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1/4 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a medium saucepan over medium heat, combine water and brown sugar. Whisk until sugar is completely dissolved, about 2-3 minutes.
  2. Whisk in pumpkin puree, pumpkin pie spice, cinnamon, ginger, nutmeg, cloves, and salt until fully incorporated and smooth.
  3. Increase heat to medium-high and bring to a gentle simmer. Reduce heat to low and cook for 10 minutes, stirring occasionally to prevent scorching.
  4. Remove from heat. Pour through a fine-mesh strainer into a heat-safe bowl or glass jar to remove any solids.
  5. Let cool for 5-10 minutes, then stir in vanilla extract.
  6. Cool completely to room temperature before sealing with a lid. Store in the refrigerator.

Notes

For best texture, use 100% pure pumpkin puree, not pumpkin pie filling. The syrup will thicken as it cools; if too thick, add a tablespoon of hot water at a time to thin. Store in the refrigerator for up to 2 weeks. Can be frozen in ice cube trays for up to 3 months.
