  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)
  • 1/2 teaspoon kosher salt (or to taste)
  • 1/4 teaspoon freshly cracked black pepper

Instructions

  1. Preheat oven to 400ยฐF (200ยฐC).
  2. Peel and cut carrots, parsnips, and beets into uniform 1-inch chunks. Place in a large mixing bowl.
  3. In a small bowl, whisk together melted butter, olive oil, maple syrup, minced garlic, thyme, salt, and pepper until smooth.
  4. Pour the glaze over the vegetables and toss until every piece is evenly coated.
  5. Spread vegetables onto large baking sheets in a single layer, ensuring space between pieces to prevent steaming.
  6. Roast for 15 minutes, then remove and flip vegetables to ensure even browning.
  7. Return to oven and roast for another 10-15 minutes, or until edges are dark brown and crispy and centers are tender.
  8. Remove from oven and let cool for 2-3 minutes before serving warm.

Notes

Do not overcrowd the pan to avoid steaming; roast in batches if necessary. Maple syrup burns easily, so watch closely and cover with foil if edges get too dark. For a dairy-free option, substitute butter with coconut oil or extra olive oil. Fresh vegetables are recommended over frozen for best texture.
