These mini turkey and cheese pinwheels are a protein-packed, kid-friendly lunchbox solution that stays rolled and doesn’t get soggy. Made with simple ingredients like tortillas, deli turkey, cheese, and cream cheese, they come together in about 10 minutes of active work and are perfect for busy mornings.

  • 4 (8-inch) flour tortillas
  • 4 ounces cream cheese, softened
  • 68 ounces deli turkey slices
  • 46 slices cheese (cheddar, provolone, Swiss, or mozzarella)
  • Salt and pepper (optional)
  • Optional add-ins: garlic powder, onion powder, mayonnaise, or mustard

Instructions

  1. Soften the cream cheese by letting it sit out for 15-20 minutes, or microwave for 10-15 seconds.
  2. Lay one flour tortilla flat on a cutting board. Ensure it’s at room temperature.
  3. Spread an even layer of cream cheese over the entire surface of the tortilla, going all the way to the edges.
  4. Place 2-3 slices of deli turkey on top of the cream cheese, overlapping slightly to cover the entire surface.
  5. Lay 1-2 slices of cheese on top of the turkey, overlapping slightly to cover any gaps.
  6. Starting at one edge, roll the tortilla tightly without tearing, using fingers to keep filling in place. Press down gently to seal the seam.
  7. Wrap the rolled tortilla tightly in plastic wrap, twisting the ends to keep it snug. Refrigerate for at least 30 minutes.
  8. After chilling, unwrap the roll and place on a cutting board. Using a sharp serrated knife, slice into 1-inch thick rounds (about 8-10 pinwheels per tortilla) using a gentle sawing motion.
  9. Pack the pinwheels in lunchbox containers. Store in an airtight container in the fridge for up to 3 days.

Notes

Use room-temperature cream cheese to avoid tearing tortillas. Chill time is crucial for clean slicing. For a quick chill, freeze for 10-15 minutes. Wipe knife between cuts for neat slices. These taste even better the next day as flavors meld.
