Easy One Bowl Banana Bread with Walnuts

This one-bowl banana bread with walnuts is perfectly moist, tender, and not too sweet, with toasted walnuts adding a delightful crunch. It’s an easy, no-fuss recipe that comes together in one bowl and is always a hit.

  • 3 large ripe bananas, mashed (about 1 ยฝ cups)
  • โ…“ cup melted unsalted butter (75 grams)
  • ยพ cup granulated sugar (150 grams)
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 ยฝ cups all-purpose flour (190 grams)
  • 1 teaspoon baking soda
  • ยฝ teaspoon salt
  • ยฝ teaspoon ground cinnamon (optional but recommended)
  • ยพ cup chopped walnuts (85 grams)

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Position the rack in the center of the oven. Grease a 9×5-inch loaf pan with butter or nonstick spray, or line it with parchment paper leaving some overhang on the long sides for easy removal.
  2. Toast the walnuts. Place the chopped walnuts in a dry skillet over medium heat. Stir them frequently for 2-3 minutes until they smell fragrant and look slightly darkened. Transfer them to a plate to cool while you prepare the batter.
  3. Mash the bananas. In your large mixing bowl, add the three ripe bananas. Mash them with a fork until mostly smooth with a few small lumps remaining. You should have about 1 ยฝ cups of mashed banana.
  4. Add the wet ingredients. Pour the melted butter over the mashed bananas and stir until combined. Add the granulated sugar, egg, and vanilla extract. Mix everything together until the sugar is mostly dissolved and the mixture looks smooth and glossy.
  5. Add the dry ingredients. Sprinkle the flour, baking soda, salt, and cinnamon (if using) over the wet mixture. Use your spatula or wooden spoon to fold everything together gently. Stir just until no streaks of flour remain.
  6. Fold in the walnuts. Add the cooled toasted walnuts to the batter. Fold them in with just a few strokes. Reserve a small handful of walnuts to sprinkle on top if you want a prettier presentation.
  7. Transfer to the pan. Pour the batter into your prepared loaf pan. Spread it evenly with your spatula. If you reserved some walnuts, sprinkle them over the top now and press them gently into the batter so they stick.
  8. Bake. Place the pan in the preheated oven and bake for 55-65 minutes. The bread is done when a toothpick inserted into the center comes out clean or with just a few moist crumbs. If the top is browning too quickly after 40 minutes, tent it loosely with aluminum foil.
  9. Cool. Let the bread cool in the pan for 10-15 minutes. Then lift it out using the parchment paper (or invert it onto a cooling rack). Let it cool completely on the rack before slicing โ€” about 1 hour.

Notes

Don’t overmix the batter. Use room temperature ingredients. Toast your nuts for best flavor. Check for doneness with a toothpick. Let it cool completely before slicing. If your bananas are really wet, the bread might take closer to 65 minutes.
