Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC) and ensure it is fully preheated.
  2. Line standard baking sheets with parchment paper or silicone baking mats.
  3. In a large mixing bowl, whisk together the softened butter, pumpkin puree, granulated sugar, vanilla extract, and egg for 2-3 minutes until smooth and creamy.
  4. Add the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt to the wet mixture. Fold with a spatula or wooden spoon until just combined; do not overmix.
  5. In a small bowl, mix the 1/2 cup granulated sugar with the 1 tablespoon cinnamon to create the coating.
  6. Scoop the dough into balls, roll them in your hands to smooth, and then roll them in the cinnamon sugar mixture until fully coated.
  7. Place the coated dough balls on the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are set and slightly golden but the centers still look soft.
  9. Let the cookies cool on the baking sheet for 5 minutes to set, then transfer to a cooling rack to cool completely.

Notes

Ensure butter is softened but not melted to prevent spreading. Do not overmix the dough to maintain a tender texture. For gluten-free options, use a 1:1 gluten-free flour blend. Store in an airtight container with a piece of bread to keep soft.
