A simple, one-pan weeknight dinner featuring crispy-skinned chicken thighs roasted with garlic, butter, and herbs, finished with a rich lemon-garlic sauce.

Ingredients

Scale
  • 3 to 4 pounds bone-in, skin-on chicken thighs
  • 1 stick (113 grams) unsalted butter
  • 4 large cloves fresh garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 cup low-sodium chicken broth
  • 1 lemon, juiced

Instructions

  1. Preheat oven to 400ยฐF (200ยฐC) and place a half-sheet pan inside to warm up.
  2. Pat chicken thighs thoroughly dry with paper towels and season both sides generously with salt and pepper.
  3. In a small saucepan over low heat, melt butter. Add minced garlic and dried herbs; simmer gently for 1 minute until fragrant but not browned. Remove from heat and stir in olive oil.
  4. Remove hot pan from oven. Place chicken thighs skin-side up on the pan with space between pieces. Pour half the garlic butter mixture over the chicken and brush to coat. Roast for 25 minutes.
  5. Remove pan. Pour chicken broth around the chicken (not over the skin). Pour remaining garlic butter mixture over the chicken. Return to oven and roast for another 15-20 minutes.
  6. Check for doneness; internal temperature should reach 165ยฐF (74ยฐC). Skin should be deep golden brown and crispy. If needed, broil for 1-2 minutes to crisp further.
  7. Remove chicken to a plate to rest. Pour pan juices into a saucepan, whisk in lemon juice, and simmer for 2 minutes to reduce slightly.
  8. Serve chicken immediately, spooning the warm sauce over the top. Garnish with fresh parsley if desired.

Notes

Ensure chicken is patted completely dry before seasoning to guarantee crispy skin. Do not overcrowd the pan, as this causes steaming. Do not flip the chicken during roasting. Use a meat thermometer to ensure chicken reaches 165ยฐF without overcooking. Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
