Easy Refreshing Watermelon Feta Mint Salad Recipe

A simple, no-cook summer salad combining sweet watermelon, salty feta, and fresh mint with a bright lime-honey dressing. Perfect for hot days, cookouts, and lazy lunches.

  • 4 cups cubed seedless watermelon
  • 1 cup crumbled feta cheese (block feta packed in brine preferred)
  • 1/4 cup chopped fresh mint leaves
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey
  • Pinch of flaky sea salt (e.g., Maldon)
  • Fresh black pepper to taste

Instructions

  1. Prepare the watermelon: Cut watermelon in half crosswise, then into 1-inch thick slices. Remove rind and white pith. Cube into bite-sized pieces (about 1-inch squares) to yield 4 cups. Place in a large mixing bowl. Pat dry with paper towels if very wet.
  2. Make the dressing: In a small bowl or mason jar, combine olive oil, lime juice, and honey. Whisk or shake until honey dissolves. Add a pinch of salt and a few cracks of black pepper. Taste and adjust.
  3. Chop the mint: Stack mint leaves, roll tightly, and slice thinly (chiffonade) to get about 1/4 cup loosely packed ribbons.
  4. Assemble the salad: Pour dressing over watermelon cubes and gently toss. Add crumbled feta and most of the mint. Toss very gently to combine, keeping feta in chunks.
  5. Let it rest: Allow salad to sit for 5-10 minutes before serving to let flavors meld.
  6. Finish and serve: Transfer to a serving platter. Top with remaining mint, an extra pinch of flaky salt, and a few more cracks of black pepper.

Notes

Use block feta packed in brine for best texture. Let salad rest 5-10 minutes before serving. Best eaten the day it’s made. For variations, add jalapeño for heat, swap mint with basil, or use avocado for a dairy-free version.
