Instructions

  1. Preheat your oven to 375°F (190°C). Place your empty baking dish in the oven while it preheats.
  2. Bring a small pot of water to a boil. Score a small X on the bottom of each peach. Drop them into the boiling water for about 30 seconds, then transfer to a bowl of ice water. Peel the peaches and slice into ¼-inch thick wedges.
  3. In a medium bowl, combine the sliced peaches, 2 tablespoons granulated sugar, brown sugar, cornstarch, lemon juice, vanilla, cinnamon (if using), and salt. Stir gently and let sit for 5 minutes.
  4. In a small bowl, whisk together the flour, 2 tablespoons granulated sugar, baking powder, and salt. Cut in the cold butter using a pastry cutter or two forks until the mixture resembles coarse meal with pea-sized butter pieces. Add the cold milk and stir with a fork until just combined (do not overmix).
  5. Carefully remove the hot baking dish from the oven. Pour the peach filling into the dish. Drop spoonfuls of the biscuit topping over the peaches. Sprinkle turbinado sugar over the top.
  6. Place the dish on a baking sheet. Bake for 25 to 30 minutes, until the filling is bubbling and the topping is golden brown. If the topping browns too quickly, tent with foil for the last 5 minutes.
  7. Let the cobbler cool on a wire rack for at least 10 minutes before serving. Serve warm, preferably with vanilla ice cream or a drizzle of heavy cream.

Notes

Let the filling sit for 5 minutes before baking to allow cornstarch to absorb juices. Use cold butter for flaky topping. Do not overmix the biscuit dough. Place a baking sheet under the dish to catch any overflow. Let cobbler rest for 10 minutes after baking to allow filling to set.
