  • 8 slices of sandwich bread
  • 1/2 cup sunflower seed butter (sunbutter)
  • 1/4 cup jelly or jam

Instructions

  1. Prepare your workspace. Lay out your 8 slices of bread on a clean cutting board. Take your jar of sunbutter and give it a good stir.
  2. Spread the sunbutter. Using your butter knife, spread about 1 tablespoon of sunbutter onto 4 of the bread slices. Spread it all the way to the edges.
  3. Spread the jelly. On the remaining 4 slices, spread about 1/2 tablespoon of jelly. Spread it evenly, but leave a small 1/4-inch border around the edge.
  4. Assemble the sandwiches. Carefully place the sunbutter slices on top of the jelly slices, sunbutter side down. Press down gently to create a sandwich.
  5. Cut off the crusts. Using your pizza cutter or sharp knife, cut off the crusts from all four sides of each sandwich.
  6. Seal the edges. Take your fork and press down firmly along all four edges of the sandwich to crimp the bread together and seal in the filling.
  7. Freeze the uncrustables. Place the sealed sandwiches on a baking sheet lined with parchment paper. Make sure they are not touching each other. Freeze for at least 1 hour, or until solid.
  8. Store for later. Once frozen solid, transfer the uncrustables to a zip-top bag or airtight container. They will keep in the freezer for up to 3 months.

Notes

Sealing the edges with a fork and freezing them makes all the difference, keeping the bread from getting soggy. Use room temperature ingredients for easier spreading. For gluten-free bread, handle gently as it can be more fragile.
