  • 1 cup Whole Wheat Flour
  • 1/2 cup Almond Flour
  • 1 cup Pumpkin Puree (100% pure, not pie filling)
  • 1 cup Plain Greek Yogurt (non-fat or 2%)
  • 2 large Eggs (room temperature)
  • 1/2 cup Honey or Maple Syrup
  • 1/4 cup Coconut Oil (melted)
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • 2 tsp Pumpkin Pie Spice or Cinnamon

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Line a standard 12-cup muffin tin with paper liners or grease with cooking spray.
  2. In a large bowl, whisk together the rolled oats, whole wheat flour, almond flour, baking soda, baking powder, and spices until evenly distributed.
  3. In a separate bowl, whisk the eggs until smooth. Add the Greek yogurt, melted coconut oil, honey, and pumpkin puree. Whisk vigorously until the mixture is uniform and glossy.
  4. Pour the wet mixture into the dry ingredients. Use a spatula to fold them together gently, stopping as soon as no dry flour is visible. Do not overmix.
  5. Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full.
  6. Bake for 20-22 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  7. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Do not use instant oats as they will turn mushy. Ensure baking soda and powder are fresh for proper rise. Room temperature ingredients help emulsify the batter better. If pumpkin puree is watery, drain it in cheesecloth for 10 minutes. For gluten-free, use a 1:1 GF flour blend and certified GF oats. For dairy-free, swap yogurt for unsweetened plant-based yogurt.
