Instructions

  1. Prepare the tomatoes: Wash, core, and halve the tomatoes. Gently squeeze out seeds and excess jelly. Dice into 1/2-inch pieces.
  2. Salt and drain: Place diced tomatoes in a bowl, sprinkle with 1/2 teaspoon salt, and toss. Let sit for 10-15 minutes to draw out moisture.
  3. Prepare the basil: Stack basil leaves, roll tightly, and slice crosswise into thin ribbons (chiffonade). Set aside.
  4. Prepare the bread: Slice baguette on a diagonal into 1/2-inch thick slices. Arrange on a baking sheet and brush or drizzle both sides lightly with olive oil.
  5. Toast the bread: Broil on high for 1-2 minutes per side, or bake at 400ยฐF (200ยฐC) for 5-7 minutes, flipping halfway, until golden brown and crisp.
  6. Drain the tomatoes: Pour tomatoes into a colander or fine-mesh strainer and let the liquid drain off. Do not press or rinse.
  7. Assemble the topping: Return drained tomatoes to the bowl. Add minced garlic (reserve one clove for bread), chopped basil, balsamic vinegar (if using), 2 tablespoons olive oil, and black pepper. Toss gently. Let sit for 5 minutes if possible.
  8. Rub the bread with garlic: While bread is still warm, cut a garlic clove in half and rub the cut side across each toast.
  9. Assemble and serve: Spoon tomato mixture generously onto each toast. Arrange on a platter, drizzle with remaining 1 tablespoon olive oil, and sprinkle with flaky sea salt if desired. Serve immediately.
