Fresh Quinoa and Kale Power Bowls Easy Healthy Recipe with Lemon Tahini Dressing

A nourishing and simple power bowl featuring quinoa, massaged kale, and a bright lemon tahini dressing. Perfect for a wholesome breakfast, lunch, or light dinner.

Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water or low-sodium vegetable broth
  • 4 cups fresh kale leaves, stems removed and chopped
  • 1 cup cherry tomatoes, halved
  • 1 medium avocado, sliced
  • 1/2 cup shredded carrots
  • 1/4 cup toasted pumpkin seeds
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup tahini
  • 2 tablespoons fresh lemon juice
  • 1 clove garlic, minced (optional)
  • 2 tablespoons warm water
  • 1 teaspoon maple syrup or honey
  • Salt, to taste

Instructions

  1. Rinse 1 cup quinoa under cold water to remove bitterness. In a medium saucepan, combine quinoa and 2 cups water or vegetable broth. Bring to a boil over medium-high heat, then reduce to a simmer and cover. Cook for 15 minutes or until liquid is absorbed. Remove from heat and let sit covered for 5 minutes. Fluff with a fork and set aside to cool slightly.
  2. Wash and chop 4 cups kale leaves, removing tough stems. Place kale in a large bowl, sprinkle with a pinch of salt, and massage gently with hands for 2-3 minutes until leaves soften and darken.
  3. In a small bowl, whisk together 1/4 cup tahini, 2 tablespoons fresh lemon juice, 1 minced garlic clove, 2 tablespoons warm water, and 1 teaspoon maple syrup or honey. Add salt to taste. Adjust consistency with more warm water if needed.
  4. To the massaged kale, add cooked quinoa, 1 cup halved cherry tomatoes, 1/2 cup shredded carrots, and 1/4 cup toasted pumpkin seeds. Gently toss to combine.
  5. Divide mixture into bowls. Top each with sliced avocado and drizzle generously with lemon tahini dressing. Finish with freshly ground black pepper.

Notes

Massage kale to soften and reduce bitterness. Rinse quinoa well to avoid bitterness. Prepare quinoa and kale up to a day ahead and keep dressing refrigerated. Add avocado just before serving to keep it fresh. Adjust dressing thickness with warm water as needed.
