  • 1 lb boneless skinless chicken breast (about 2 medium breasts)

  • 4 oz light cream cheese, softened
  • ยฝ cup shredded cheddar cheese
  • 34 green onions, sliced
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • ยฝ teaspoon garlic powder (optional)
  • Ranch or blue cheese dressing for drizzling (optional)

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC). Line a baking sheet with aluminum foil for easy cleanup.
  2. Wash and scrub the sweet potatoes thoroughly. Pat them dry. Use a fork to prick each sweet potato 6-8 times. Rub each one with olive oil and sprinkle with salt and pepper.
  3. Place the sweet potatoes on the prepared baking sheet. Roast for 35-45 minutes, until fork-tender but still holding their shape.
  4. While the potatoes roast, place the chicken breasts in a medium pot and cover with water. Bring to a boil over medium-high heat, then reduce to a simmer. Cook for 12-15 minutes, until cooked through (internal temperature of 165ยฐF/74ยฐC).
  5. Drain the water and let the chicken cool slightly. Use two forks to shred the chicken into bite-sized pieces.
  6. In a mixing bowl, combine the shredded chicken, buffalo sauce, softened cream cheese, and garlic powder (if using). Stir until well coated and creamy.
  7. Optional: Transfer the buffalo chicken mixture to a small skillet and warm over medium heat for 3-4 minutes.
  8. Once the sweet potatoes are done, let them cool for 5 minutes. Slice each one open lengthwise, being careful not to cut all the way through. Fluff the insides slightly with a fork.
  9. Spoon the buffalo chicken mixture evenly into each potato. Sprinkle shredded cheddar cheese over the top.
  10. Return the stuffed potatoes to the oven for 5-7 minutes, until the cheese is melted and bubbly.
  11. Remove from the oven. Top with sliced green onions and a drizzle of ranch or blue cheese dressing if desired. Serve hot.

Notes

For meal prep, store the buffalo chicken mixture and roasted sweet potatoes separately. Assemble just before reheating to keep the potatoes from getting soggy. Room temperature cream cheese blends more smoothly. Shred chicken while warm for best texture.
