A simple, creamy, and nutritious breakfast made by soaking chia seeds in milk overnight. This recipe requires minimal prep time and offers a customizable, high-fiber start to your day.

Ingredients

Scale
  • 1/2 cup (about 60 grams) whole black chia seeds
  • 1 1/2 cups (355 ml) milk (almond, oat, coconut, or dairy)
  • 2–3 tablespoons maple syrup or honey
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon sea salt
  • 1 tablespoon ground flaxseed or psyllium husk (optional, for thickening)

Instructions

  1. In a mixing bowl or directly in the jar, pour in the milk. Add the maple syrup, vanilla extract, and sea salt. Whisk together until the sweetener is fully dissolved.
  2. Sprinkle the chia seeds into the liquid mixture slowly while whisking immediately to prevent clumping.
  3. Let the mixture sit for 5 minutes, then give it a vigorous stir again to break apart any remaining clusters.
  4. Divide the mixture into serving jars (such as 16-ounce mason jars). Cover tightly and place in the refrigerator.
  5. Let the pudding soak for at least 8 hours or overnight.
  6. When ready to eat, remove from the fridge and give the pudding a final good stir. Add a splash of milk if it is too thick.
  7. Top with favorite fruits, nuts, or seeds and serve cold.

Notes

Use cold milk to prevent seeds from gelling too quickly on the outside. Whisking vigorously is crucial to avoid clumps. The pudding can be stored in the refrigerator for up to 5 days. Do not freeze as the texture may become unpleasant. If the pudding is too runny, add more seeds; if too thick, add more milk.
