These healthy pumpkin oatmeal cups are the perfect grab-and-go breakfast that tastes like a pumpkin muffin but has the staying power of oatmeal. Made with simple ingredients in one bowl, they’re soft, tender, and perfect for meal prep.

  • 2 cups (180g) rolled oats
  • 1 cup (245g) pumpkin puree (100% pure pumpkin)
  • 2 large eggs
  • 1/3 cup (80ml) pure maple syrup
  • 1/2 cup (120ml) milk (any kind)
  • 2 tablespoons coconut oil, melted
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • Optional mix-ins: 1/2 cup chocolate chips, dried cranberries, chopped pecans, or raisins

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Line a 12-cup muffin tin with paper liners or grease it well.
  2. In a large mixing bowl, whisk together the wet ingredients: pumpkin puree, eggs, maple syrup, milk, melted coconut oil, and vanilla extract until smooth and well combined.
  3. In a separate small bowl, mix the dry ingredients: rolled oats, pumpkin pie spice, cinnamon, baking powder, baking soda, and salt. Stir together with a fork.
  4. Pour the dry ingredients into the wet ingredients. Use a rubber spatula to fold everything together until just combined. Do not overmix.
  5. If adding mix-ins, fold them in now.
  6. Let the batter rest for 5 minutes to allow the oats to absorb some liquid.
  7. Scoop the batter into the prepared muffin tin, filling each cup almost to the top.
  8. Bake for 18-22 minutes, until the edges are set and lightly golden, and the tops spring back when gently pressed.
  9. Let the cups cool in the pan for 5 minutes, then transfer to a cooling rack to cool completely.
  10. Cool completely before storing.

Notes

Let the batter rest for 5 minutes before baking for softer cups. Use room temperature ingredients to prevent coconut oil from solidifying. Grease paper liners with cooking spray to prevent sticking. These cups taste even better the next day as flavors meld.
