  • 2 tsp Vanilla Extract
  • 3 large Apples (peeled and diced, mix of Granny Smith and Honeycrisp)
  • 1 tsp Cinnamon
  • ยฝ cup Heavy Cream
  • ยฝ cup Brown Sugar (packed)
  • 2 tbsp Butter (for glaze)

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Thoroughly grease a 10-12 cup bundt pan with solid shortening or baking spray with flour, ensuring all crevices are covered. Dust with flour and tap out excess.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  3. In a large bowl, beat the softened butter and granulated sugar on medium speed until light and fluffy (about 3-4 minutes).
  4. Add eggs one at a time, beating well after each addition. Scrape down the sides of the bowl. Mix in the vanilla extract.
  5. Add the dry ingredients to the butter mixture in three parts, mixing on low speed until just combined. Do not overmix.
  6. Gently fold in 2 cups of the diced apples using a spatula. Reserve 1 cup of apples for the top.
  7. Pour batter into the prepared bundt pan and smooth the top. Sprinkle the remaining 1 cup of apples over the batter and press in slightly.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top browns too quickly, cover loosely with foil after 30 minutes.
  9. Let the cake cool in the pan for 15 minutes, then invert onto a wire rack to cool completely.
  10. While the cake cools, make the caramel glaze by combining heavy cream, brown sugar, and butter. Pour the warm glaze over the completely cooled cake.
  11. Optional: Sprinkle with a pinch of sea salt immediately after pouring the glaze.

Ensure all ingredients are at room temperature for best results. Do not overmix the batter to avoid a tough cake. Use firm apples like Granny Smith or Honeycrisp; avoid Red Delicious as they turn to mush. If apples release too much juice, toss them with a teaspoon of flour before folding in.
