Instructions

  1. Peel the bananas and mash them in a microwave-safe mug or bowl until mostly smooth.
  2. Add the vegetable oil, egg, and vanilla extract to the mashed bananas. Whisk vigorously until the mixture is uniform and slightly frothy.
  3. Add the flour, sugar, baking soda, and salt to the wet mixture. Stir gently until just combined; do not overmix.
  4. Fold in the chopped walnuts.
