  • 4 oz Manchego cheese (aged, sliced thin)
  • 4 oz Brie cheese (room temperature)
  • 4 oz thinly sliced prosciutto
  • 4 oz salami (sliced, like Genoa or soppressata)
  • 1/4 cup honey (preferably local or orange blossom)
  • 1/4 cup dried figs or dates
  • 1/4 cup Marcona almonds (roasted and salted)
  • 1/4 cup cornichons or small pickles
  • 1 small baguette or artisan crackers (sliced and lightly toasted)
  • Optional: fresh grapes or apple slices
  • Optional: dark chocolate (2-3 squares)

Instructions

  1. Start with the cheeses. Place the Manchego slices in one corner of the board and the brie in another. Leave a little space between them so they don’t touch other ingredients directly. Brie should be at room temperature (about 68ยฐF) for the best creamy texture. If it’s cold from the fridge, let it sit out for 20 minutes before arranging.
  2. Add the meats next. Fold the prosciutto slices into loose ribbons or waves and place them near the brie. Layer the salami slices in a small stack or fan them out. Meats should be the second thing you place because they take up more visual space. I usually leave about 2 inches between the meats and cheeses to keep flavors distinct.
  3. Place your sweet elements. Drizzle the honey into a small ramekin or directly onto the board in a small pool (about 2 tablespoons). Arrange the dried figs or dates in a small cluster near the Manchego. The sweetness balances the saltiness of the prosciutto and salami beautifully.
  4. Add the crunchy and tangy bits. Scatter the Marcona almonds in a small pile near the center of the board. Place the cornichons in a small bowl or directly on the board. I like to keep them in a little cluster so they’re easy to grab. The acidity of the pickles cuts through the richness of the cheese and meat.
  5. Fill in with bread and fresh fruit. Arrange the baguette slices or crackers along the edges of the board. If using grapes or apple slices, place them in small gaps to add color and freshness. I usually put the grapes on one side and the baguette on the other for visual balance. Leave a little breathing room between everything so the board doesn’t look overcrowded.
  6. Finish with optional dark chocolate. If you want a sweet ending, place 2-3 squares of dark chocolate on a corner of the board. It’s a lovely little surprise at the end of the meal. I like to put it near the brie so people can try the brie-and-chocolate combo (trust me on this one).
  7. Serve immediately. The board is best enjoyed at room temperature within an hour of assembly. If you’re making it ahead, cover it loosely with plastic wrap and refrigerate, but bring it back to room temperature for about 15-20 minutes before serving. The brie will firm up in the fridge, so it needs time to soften again.

Notes

Room temperature is non-negotiable for best flavor. Don’t overcrowd the board; leave about an inch of empty space between each ingredient cluster. Slice the baguette thin (about 1/4-inch thick) and lightly toast if desired. Prep everything before arranging for a smooth flow.
