A simple yet elegant salad featuring smoky grilled peaches, creamy burrata, and peppery arugula, finished with a balsamic glaze and toasted almonds. Perfect for an end-of-summer celebration.

Ingredients

Scale
  • 4 medium ripe but firm peaches
  • 8 ounces burrata cheese (1 large ball or 2 small ones)
  • 5 ounces fresh arugula
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons balsamic glaze
  • 1 tablespoon honey
  • 1/4 cup fresh basil leaves, loosely packed and torn
  • 1/4 cup toasted sliced almonds
  • Flaky sea salt (like Maldon) and freshly cracked black pepper to taste

Instructions

  1. Preheat your grill or grill pan to medium-high heat (about 400-450°F / 200-230°C).
  2. Cut each peach in half along the natural seam, twist to separate, and remove the pit. Brush the cut sides lightly with a little olive oil.
  3. Place the peaches cut-side down on the hot grill grates. Cook undisturbed for 3-4 minutes until deep grill marks appear. Flip and grill the skin side for 1 minute. Remove to a plate and drizzle immediately with honey.
  4. Arrange the arugula on a large serving platter. Drizzle with about 2 tablespoons of olive oil and a pinch of salt and pepper. Toss gently to coat.
  5. Arrange the warm peach halves over the arugula, cut-side up. Gently tear the burrata into large pieces with your hands and nestle among the peaches.
  6. Drizzle the remaining 1 tablespoon of olive oil and the balsamic glaze over the salad. Add more flaky sea salt and a generous crack of black pepper. Sprinkle with toasted almonds and torn basil leaves.
  7. Serve immediately while the peaches are warm and the burrata is cool.

Notes

Use ripe but firm peaches to prevent them from falling apart on the grill. For best results, serve immediately to enjoy the contrast of warm peaches and cool burrata. If making ahead, grill peaches up to an hour in advance and assemble just before serving. To make your own balsamic glaze, simmer 1/2 cup balsamic vinegar with 1 tablespoon brown sugar until thickened (about 10 minutes).
