A quick and easy summer salad featuring smoky grilled peaches, creamy burrata, fresh basil, and a drizzle of balsamic glaze. Perfect for Labor Day BBQs and guaranteed to impress.

Ingredients

Scale
  • 4 ripe but firm peaches, halved and pitted
  • 8 ounces burrata cheese (2 small balls or 1 large)
  • 1012 large fresh basil leaves, torn
  • 23 tablespoons good quality balsamic glaze
  • 2 tablespoons extra virgin olive oil, plus more for grilling
  • 1/2 teaspoon flaky sea salt (such as Maldon)
  • Freshly cracked black pepper, to taste
  • 2 cups arugula or mixed greens (optional)
  • 1/4 cup toasted pine nuts or walnuts (optional)

Instructions

  1. Preheat your grill to medium-high heat. Brush the grates clean and lightly oil them.
  2. Wash and pat dry the peaches. Cut each peach in half along the natural seam, twist to separate, and remove the pit. Brush the cut sides lightly with olive oil.
  3. Place the peaches cut-side down on the hot grill grates. Cook undisturbed for 3-4 minutes until dark grill marks appear and the peaches soften slightly. Flip and cook for another 1-2 minutes on the skin side.
  4. Transfer the grilled peaches to a plate and let them cool for about 5 minutes.
  5. Arrange the grilled peach halves on a serving platter, cut-side up. If using greens, spread them on the platter first. Tear the burrata into pieces with your hands and nestle them between and on top of the peaches.
  6. Tear the basil leaves over the salad. Drizzle the balsamic glaze in a zigzag pattern over everything. Sprinkle with flaky sea salt and a few cracks of black pepper. If using nuts, scatter them over the top.
  7. Serve immediately.

Notes

Pick peaches that are ripe but firm. Let burrata sit at room temperature for 15-20 minutes before serving. Don’t skip oiling the peaches to prevent sticking. Grill marks should be dark but not burnt. Assemble just before serving for best texture. Leftovers can be stored separately for up to 2 days.
