A thick, creamy, and nutritious breakfast bowl made with frozen banana, peanut butter, and protein powder. It’s ready in under 5 minutes and provides sustained energy without the crash.

  • 1 large ripe banana, peeled, sliced, and frozen
  • 1/2 cup frozen cauliflower rice
  • 1/2 cup plain Greek yogurt
  • 1 tbsp smooth, unsweetened peanut butter
  • 1/4 cup unsweetened almond milk
  • 1 scoop vanilla protein powder (whey or plant-based)
  • 1 tsp chia seeds (optional)
  • 1 tbsp sliced almonds (for topping)
  • 1 tbsp dark chocolate chips (for topping)
  • 1/2 fresh banana, sliced (for topping)
  • Extra peanut butter for drizzle (for topping)

Instructions

  1. Peel and slice the banana into chunks. Place the frozen banana, frozen cauliflower rice, and Greek yogurt into the blender jar.
  2. Pour in the almond milk and add the peanut butter. Add the protein powder and chia seeds if using.
  3. Secure the lid and start the blender on low speed, gradually increasing to high. Blend for 60-90 seconds until the mixture is thick and creamy, similar to soft-serve ice cream. Stop to scrape down sides if necessary.
  4. Check consistency. If too thick, add a splash more almond milk and blend briefly. If too thin, add more frozen banana or ice.
  5. Pour the thick mixture into a serving bowl and spread evenly or create swirls.
  6. Top with sliced almonds, dark chocolate chips, fresh banana slices, and a drizzle of extra peanut butter.

Notes

Use frozen bananas for the correct thick texture; fresh bananas will make it watery. Add liquid last to help the blender process solids first. If using a standard blender, stop and scrape sides frequently. Can be made vegan by using plant-based yogurt and protein powder.
