Ingredients

Scale
  • 1 cup (226g) unsalted butter, melted and slightly cooled
  • 1 cup (200g) granulated white sugar
  • 1 cup (220g) packed brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 ยผ cups (280g) all-purpose flour
  • 1 teaspoon cornstarch
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 ยฝ cups (270g) semi-sweet or dark chocolate chips
  • Optional: ยฝ cup chopped walnuts or pecans

Instructions

  1. Melt the butter in a microwave-safe bowl or saucepan in 30-second intervals, stirring until just melted. Let cool for 5-10 minutes until warm but not hot.
  2. In a large mixing bowl, whisk the cooled melted butter with granulated sugar and brown sugar vigorously for about 2 minutes until glossy and slightly thickened.
  3. Add the eggs and vanilla extract to the butter mixture and whisk until smooth and well combined.
  4. In a separate medium bowl, whisk together the all-purpose flour, cornstarch, baking soda, and salt.
  5. Pour the dry ingredients into the wet mixture and fold with a silicone spatula until no streaks of flour remain. Do not overmix.
  6. Fold in the chocolate chips (and nuts if using) until evenly distributed.
  7. Preheat oven to 350ยฐF (175ยฐC). Line two large baking sheets with parchment paper.
  8. Drop balls of dough onto the prepared sheets, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes, watching closely after 9 minutes. Edges should be set and lightly golden, but centers should look soft and slightly underdone.
  10. Remove from oven and let cookies sit on the hot baking sheet for 5 minutes to set, then transfer to a wire cooling rack.

Notes

Do not overbake; cookies will firm up as they cool. Ensure butter is cooled before adding eggs to prevent cooking them. Use the spoon-and-level method for flour to avoid dry cookies. For gluten-free, use a 1:1 gluten-free flour blend. For dairy-free, use plant-based butter.
