  • 1 large red bell pepper
  • 1 large green bell pepper
  • 2 medium carrots
  • 1 English cucumber
  • 1 small can black olives, sliced
  • 1.5 cups white bean dip or hummus
  • 1 tablespoon fresh parsley or dill, chopped

Instructions

  1. Wash all vegetables thoroughly. Peel carrots if necessary. Slice bell peppers in half, remove seeds and membranes, and cut into long, thin strips (approx. 1/4 inch wide). Slice cucumber into similar strips. If using regular cucumber, scoop out seeds to reduce moisture.
  2. Slice black olives in half lengthwise, then slice each half into three thin strips to create spider legs. Set aside on a paper towel.
  3. Spread the white bean dip or hummus in the center of a large, flat platter in a thick, even layer (approx. 1/2 inch high), shaping it into a rough circle or oval. Leave a 1-inch border around the edge.
  4. Lay pepper strips across the dip in a radial pattern, starting from the center and fanning out to the edges like spokes of a wheel. Use both red and green peppers. Place about 8-12 strips.
  5. Weave remaining pepper strips horizontally across the radial strips, starting near the center and working outward with larger curves to mimic a spider web. Press strips gently into the dip to secure.
  6. Place olive slices at the intersections of the web strips to create spiders. Cluster a few in the center and scatter others on the outer edges.
  7. Sprinkle chopped parsley or dill over the center for garnish. Serve immediately.

Notes

Pat vegetables dry after washing to prevent the dip from becoming watery. If prepping ahead, store cut veggies in airtight containers with a paper towel at the bottom. Assemble the web no more than 2 hours before serving to maintain crispness. Ensure the dip is thick (like thick yogurt) to support the vegetable structure.
