Tender Slow Cooker Honey Garlic Chicken and Vegetables

A comforting slow cooker recipe featuring juicy chicken breasts and tender vegetables soaked in a sweet and savory honey garlic sauce. Perfect for an easy, family-friendly meal.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680g)
  • 3 large carrots, peeled and chopped into chunks
  • 2 cups baby potatoes, halved (small red or Yukon gold)
  • 1 medium onion, cut into wedges
  • 2 cups broccoli florets (added near the end to keep crisp)
  • 1/3 cup honey (raw honey preferred)
  • 4 cloves garlic, minced
  • 1/4 cup low-sodium soy sauce (or tamari for gluten-free)
  • 2 tablespoons ketchup
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon dried oregano or Italian seasoning
  • 1/2 teaspoon black pepper
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (to thicken sauce at the end)
  • Salt and pepper to taste

Instructions

  1. Wash and chop carrots into 2-inch pieces, halve baby potatoes, and cut onion into wedges. Keep broccoli florets separate to add later.
  2. In a medium bowl, whisk together honey, minced garlic, soy sauce, ketchup, apple cider vinegar, dried oregano, and black pepper until smooth and combined.
  3. Place the carrots, potatoes, and onion at the bottom of the slow cooker insert.
  4. Season chicken breasts lightly with salt and pepper, then lay them on top of the vegetables.
  5. Pour the honey garlic sauce evenly over the chicken and vegetables, coating everything well.
  6. Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours until chicken is tender and juices run clear.
  7. About 30 minutes before the end of cooking, stir in the broccoli florets on top and cover again.
  8. Remove chicken and vegetables to a serving dish. Stir the cornstarch slurry into the slow cooker liquid, turn to high heat, and cook uncovered for 5 minutes until sauce thickens. Skip if you prefer a thinner sauce.
  9. Pour the thickened honey garlic sauce over the chicken and vegetables, garnish with fresh parsley or green onions if desired, and serve warm.

Notes

For gluten-free, use tamari instead of soy sauce. Add broccoli or other delicate vegetables in the last 30 minutes to keep texture. Use cornstarch slurry to thicken sauce after cooking. Pounding thick chicken breasts helps even cooking. Avoid overcrowding the slow cooker for best results. Can substitute chicken thighs for juicier meat, adjusting cooking time accordingly.
