This smoky, sweet, and tangy grilled corn and black bean salad comes together in under 30 minutes. Perfect for summer barbecues, it’s a crowd-pleaser that’s healthy, gluten-free, and vegan-friendly.

  • 4 ears corn on the cob, husked
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 medium red bell pepper, diced small
  • ยฝ medium red onion, finely diced
  • 1 small jalapeรฑo, seeds removed and minced
  • ยฝ cup fresh cilantro, chopped
  • 3 tablespoons fresh lime juice
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon ground cumin
  • ยฝ teaspoon chili powder (ancho chili powder recommended)
  • ยฝ teaspoon salt, or to taste
  • ยผ teaspoon freshly ground black pepper
  • ยฝ cup feta cheese, crumbled (optional)
  • 1 large avocado, diced

Instructions

  1. Preheat your grill to medium-high heat (about 400ยฐF / 200ยฐC). Husk the corn and remove all silk. Rinse and pat dry.
  2. Grill the corn for 10-12 minutes, turning every 2-3 minutes with tongs, until nicely charred and tender. Let cool for 5 minutes on a cutting board.
  3. Cut the kernels off the cob by standing each ear upright and slicing downward with a sharp knife.
  4. While the corn cools, drain and rinse the black beans. Dice the red bell pepper and red onion, mince the jalapeรฑo, and chop the cilantro.
  5. Make the dressing: In a small bowl, whisk together lime juice, olive oil, cumin, chili powder, salt, and black pepper. Taste and adjust.
  6. In a large mixing bowl, combine grilled corn, black beans, bell pepper, red onion, jalapeรฑo, and cilantro. Pour dressing over and toss gently.
  7. Fold in feta if using. Let salad rest at room temperature for at least 10 minutes to meld flavors.
  8. Just before serving, gently fold in diced avocado. Sprinkle extra cilantro and a pinch of salt on top.

Notes

For best flavor, let the salad rest for 10-15 minutes after mixing. Add avocado just before serving to prevent browning. If you don’t have a grill, char corn under the broiler or in a cast iron skillet. Frozen corn can be used; thaw and pat dry before grilling.
