  • 1 tablespoon olive oil or butter
  • 1/2 cup beer or chicken broth (optional)
  • 46 soft pretzels (store-bought or bakery-fresh)
  • 2 tablespoons melted butter
  • Coarse sea salt or pretzel salt
  • 1/2 cup whole-grain mustard or spicy brown mustard
  • 1/2 cup beer cheese dip or softened brie
  • 1/2 cup cornichons or dill pickle spears
  • 1/2 cup sliced red onion or pickled red onions (optional)
  • Fresh herbs for garnish (parsley or chives)
  • Apple slices or grapes (optional)
  • Roasted nuts (optional)
  • Pretzel sticks or mini pretzels (optional)
  • Sauerkraut (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Place the pretzels on a baking sheet and warm them for 5-7 minutes, just until they’re soft and slightly crisp on the outside. Brush with melted butter and sprinkle with coarse salt immediately after removing from the oven. Set aside.
  2. Prepare the bratwurst. Heat a large cast iron skillet over medium heat. Add the olive oil or butter. Once it shimmers, add the bratwurst links in a single layer. Cook for 4-5 minutes per side, until deep golden brown and the casings are crisp. Don’t overcrowd the pan—work in batches if needed.
  3. Simmer for juiciness. (Optional but recommended) After searing, add 1/2 cup beer or chicken broth to the skillet. Reduce heat to low, cover, and simmer for 8-10 minutes. This keeps the brats moist and adds a subtle flavor. If you skip this step, make sure the internal temperature reaches 160°F (71°C).
  4. Rest and slice. Transfer the cooked bratwurst to a cutting board and let them rest for 2-3 minutes. Slice each link into 2-3 pieces on a slight diagonal. This makes them easier to grab and eat, plus it looks nicer on the board.
  5. Assemble the board. Place the small bowls of mustard, beer cheese, and pickles on your serving board. Arrange the sliced bratwurst in a loose pile or line. Tuck the warm pretzels around the sausages. Add any optional items like apple slices, nuts, or sauerkraut in the gaps.
  6. Garnish and serve. Sprinkle fresh parsley or chives over the board for color. Serve immediately while the brats and pretzels are still warm. Let people build their own combinations—that’s the fun part.

Notes

Don’t pierce the bratwurst casings while cooking to keep them juicy. Warm pretzels just before serving to avoid sogginess. The board can be adapted with vegetarian sausages or gluten-free pretzels. Leftover bratwurst and pretzels can be stored separately in the refrigerator for up to 3 days.
