Ingredients

  • Sharp Cheddar Cheese (Cabot Extra Sharp recommended), cut into cubes or thin slices
  • Brie or Camembert, one small wheel, rind on
  • Manchego cheese, sliced into thin wedges
  • Prosciutto, thinly sliced
  • Salami or Soppressata, cut into halves or quarters
  • Smoked Chorizo, sliced
  • Bosc Pears, sliced thinly on a bias
  • Fresh Figs, halved or quartered
  • Red or Green Grapes, whole clusters
  • Fresh Cranberries
  • Whole Grain Mustard
  • Fig Jam or Honey
  • Walnuts or Pecans, toasted
  • Water crackers and seeded crispbreads

Instructions

  1. Wash and pat dry grapes. Slice Bosc pears thinly on a bias and toss with lemon juice if not assembling immediately. Halve figs and keep cranberries whole.
  2. Cut sharp cheddar into uniform cubes or thick slices. Slice manchego into thin wedges. Leave Brie whole or cut into quarters.
  3. Fold prosciutto into loose rosettes or thirds and tuck into board corners. Arrange salami in a fan shape or pile loosely in the center.
  4. Place the Brie wheel near the center or corner. Scatter cheddar cubes and manchego wedges around the board, leaving space for fruits.
  5. Tuck pear slices between meats. Place fig halves cut-side up. Scatter grapes in clusters. Sprinkle fresh cranberries over the top for color.
  6. Pour toasted walnuts or pecans into empty spaces. Add crackers, standing some up against the cheese for height.
  7. Place ramekins of whole grain mustard, fig jam, and honey on the board. Drizzle honey over the brie and manchego.

Notes

Take cheeses out of the refrigerator at least 30 minutes before serving to allow flavors to bloom. Toast nuts in a dry skillet for 3 minutes to boost flavor. Assemble fresh fruit and honey drizzle just before serving to maintain freshness. Serve at room temperature.
