  • 4 cups water
  • 1 cup granulated sugar
  • 2 cinnamon sticks
  • 1 tablespoon fresh ginger, thinly sliced

  • 1 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into small cubes
  • 1/4 cup chopped crystallized ginger (optional)

Instructions

  1. Peel the pears, leaving stems on. Cut a thin slice off the bottom so they stand upright. Use a melon baller or small spoon to scoop out the core from the bottom without breaking through the stem end.
  2. In a medium saucepan, combine 4 cups water, 1 cup sugar, 2 cinnamon sticks, sliced fresh ginger, vanilla extract, and a pinch of salt. Bring to a gentle simmer over medium heat, stirring until sugar dissolves (about 3-4 minutes).
  3. Gently lower the pears into the simmering liquid. Reduce heat to low, cover, and simmer for 20-25 minutes until a knife slides easily into the thickest part. Transfer pears to a plate to cool.
  4. Preheat oven to 375°F (190°C).
  5. In a medium bowl, combine rolled oats, all-purpose flour, brown sugar, ground ginger, ground cinnamon, and salt. Whisk to distribute spices.
  6. Add cold butter cubes. Use a pastry cutter, two forks, or your fingertips to work butter into dry ingredients until mixture is crumbly with pea-sized butter pieces. Stir in crystallized ginger if using. Refrigerate topping while preparing pears.
  7. Place poached pears in an 8×8 inch baking dish or divide among 4 individual ramekins. Drizzle any released juice over pears.
  8. Spoon crisp topping over each pear, pressing gently. Do not pack down.
  9. Bake for 25-30 minutes until topping is golden brown and pears are bubbling. If browning too quickly, tent with foil for last 10 minutes.
  10. Let rest for 5 minutes before serving.

Notes

Let pears cool before adding topping to prevent butter from melting. Keep butter cold for a crumbly topping. Do not rush poaching; keep liquid at a gentle simmer. Taste pears before assembling and adjust sweetness if needed. Do not skip salt in topping.
